Hamakawa-shoten is located in the eastern part of Kochi Prefecture. Hamakawa-shoten started to produce junmai-shu (pure-rice sake) earlier than other sake brewers in Kochi Prefecture. It sells various kinds of sake under the bland name of Bijofu (young and good-looking guy). Today, I bought Bijofu Usunigori Rose -sparkling sake-.
Usunigori-zake is a slightly filtrated sake. As described as sparkling sake, the sake sparkles. Hamakawa-shoten produces usunigori-zake by fermenting Junmai-ginjo-shu using the original method. The pinkish color is derived from blueberry. Judging from the bottle, color, and label of the sake, it aims at women.
As soon as I opened the bottle, the sake started to sparkle significantly. The sparkling continues for more than 20 seconds. It has a strawberry-like aroma a little bit. Since the sake has a pinkish color and contains lees, I thought it tasted sweet. However, it has a dry taste. I like that taste but I think it will become much better in two or three days.
